Jerk chicken with rice and peas!!! πŸ‘

How you all doing? Here is my final triple whooper, so excited!

So this week. I have visited( literally 2 continents) 😊 and I must say it is an experience that I will never forget.

So I started with cinnamon roll, then went unto panna cotta and now finally some proper home cooking.

I like Jamaican food, milky because of the flavour and I must admit, it is one if the main meals you can prepare that has little or no oil. It’s mostly the spices.

Here are the ingredients:
Kidney beans
Coconut milk
4 Chicken thighs

2 Scotch bonnet
1/2 teaspoon of thyme
1 teaspoon of Ginger
1 Tablespoon of Brown sugar (light)
2 cloves Garlic
2 tablespoon of vegetable oil.
1/3 cup of Dark soy sauce
5 Spring onions
1 teaspoon of Nutmeg
2 teaspoon All spice (also known as pimento)
1 teaspoon of Cinnamon
1 Onion
1/2 cup of Orange juice
2 teaspoon of Salt
1/4 cup of Vinegar

The Above will serve 4 people
The marinade quantity is for double to triple usage.

Prep time: 10 minutes
Cooking time: 1 hour 15 minutes
Total time: 1 hour 25 minutes

Lets begin.

Wash and cook the rice in coconut milk and simmer for 15 minutes on a tight lid. While it is cooing, grind all the ingredients for the marinade together and set aside.

Wash the chicken, and cut them on top in three lines. This will enable the marinade infuse. Rub the ingredients over the chicken and rub it evenly on all parts. Pop it into the oven. Ideally this step should have been done 3 hours prior to cooking, so that the marinade will sip into the chicken.

Back to the rice, add the tin of kidney beans, including the water to the rice and cook, the water is what gives it the brown look. Simmer and cook until its soft enough to chew.

Check your chicken, ensure that the juices are running clear, this will help you determine how long you have left to cook the chicken. The most important thing, is not to cut corners, salmonella is not a joke at all.

While the chicken is cooking, remove the chicken from the baking tray and transfer it to another baking tray and continue grilling. The sauce left in the pan from the first tray, add sliced peppers and grill for 5minutes.

Remove the sauce from the oven and set aside. Check your chicken it should be done. Good news!

Now to serve… And then finally enjoy your meal.
