Yamarita 

Hi guys. I hope you are all doing well.

I am back again with another recipe. this time, I have gone back to my university days. 🙂 

I remember this fast food joint that served yamarita. I was a bit skeptical about trying it, but when my friend encouraged me to, I gave it a go. I have loved it since then. 

 I was going through some pictures on a social network site and I came across it again, I decided there and then to make my own version at home. 

 it’s very simple to make and the steps are very easy to follow.

Lets get started. 

INGREDIENTS: 

  •  1 Tuber of Yam 
  •  2 large eggs 
  •  half a cup of flour 
  •  1 teaspoon of paprika or dry pepper
  •  1 stock cubesalt

    beef (depending of the amount of people you need to serve) 

SAUCE

  •  6 scotch bonnet peppers 
  •  1 can of plum tomatoes
  • onions 
  • 2 1/2 tablespoons of oil 

 UTENSILS 

  •  3 medium sized pot(s) 
  •  2 deep-frying pan 
  • wooden spoon 
  •  spatula 
  •  chopping board 
  •  knife 

METHOD: 

Peel and slice the plantain, cut into your desired shape and  set aside. 

Next peel and cut the yam.  cut into two. and slice each half into two. then cut horizontally.

wash it thoroughly to get rid of all the starch. soak the washed yam in salt water and set aside for 10 minutes. 

while soaking the yam, wash the beef, seasoning it salt and stock cube, add a little water and cook until soft, but firm. ( 50 minutes depending on the size) 

Back to the yam, remove it from the salt water, add it to the medium pot, add water and cook for 12 minutes. 

While both the yam and beef is cooking, blend the pepper and plum tomatoes.  pour it into another pot and boil until the water dries up. set aside. 

check on the yam, poke it with a fork, it its cooked, drain it and set aside.  

break the eggs into a bowl, add the paprika and stock cube. whisk together. 

heat up two table spoons of oil in a small pot, slice the onions add it to the pepper and fry for 2 minutes and then add the cooked pepper and cook. 

Next heat up the oil in the deep-frying pan, and make sure its hot before you add the yam, or else it will only end up soaking up oil. ( You can do a hot test, by sprinkling flour, if it fizzles, then its hot enough) 
while frying the yam, remove the beef and pop it into the oven for 15 minutes to grill. once done add this to the cooked pepper, stir and cook until well incorporated. 

finally fry your plantain (use a different oil and frying pan) . by the time the you are done frying the plantain, all the other meals should be ready to serve.

Now assemble the yam ( see picture) on a plate. put the egg mixture close to it and also the flour. take a piece of yam, roll it in the egg mixture and finally roll in the flour. complete this process for a few pieces of yam ( enough to fit into the frying pan at a go) do this continuously until you fry all the yam.
