Hi guys. How are you all doing? Today I’m making a special. I have been wanting to make this a long time. Ever since my colleague at work spoke about cooking it every now and then. He is a confirmed foodie I tell you.
From the description I knew it was a dish I really wanted to cook. So I promised my self to get all the ingredients.
I can’t wait to share it with you all.
- Goat meat
- 2 Scallions (green onions)
- 2 Scotch bonnet peppers
- 1 large Onions
- Thumbsized Ginger
- 2 cloves Garlic
- 2 tbs of Caribbean curry powder
- 1 teaspoon of Turmeric
- 1 teaspoon of Cumin
- 1 teaspoon of All spice
- 1 cup of Beef stock
- 1 can of Chopped tomatoes
- 1 can of Coconut milk
- Knorr cubes
- Vegetable oil
1 Large pot
1 wooden spoon
First of all, wash the goat meat, then season with all the spices. Chop the onions, Scallions, peppers, garlic and ginger. Add it to the goat meat and work all of the ingredients into the meat. Seal tightly and refrigerate overnight.
But if you don’t have that much time, marinate for at least 3 hours.
After marinating, put the pot on fire, add the oil and heat it for about a minute. While its heating up, remove the beef from the marinade and shake of any excess marinade.
Add the goat meat to the pot and seal it until its brown on both sides. Remove the beef and set aside.
Next add the remaining marinade ingredients and fry for 5 minutes. Then add the meat back into the pot, pour in the stock, add the plum tomatoes and the last tablespoon of the remaining spices. Turn on the lowest heat and let it cook for 2 hours and 30 minutes.
By now all the ingredients should have all cooked properly and the meat tender.
Finally add the 3/4 of coconut milk, increase the heat and cook for the last 30 minutes. Add salt to taste where necessary.
P.s the curry should be semi thick.if its not that means you have added too much water/stock.
That’s it, you are done.
