Hi guys. How are you all doing. I haven’t blogged about desserts in a while, so I decided to start again.
This Christmas was the perfect opportunity to serve the tiramisu. I love it, but ir has a splash of alcohol, which isnt my thing. So I decided to make mine without it and it turned out great.
The typical tiramisu has mascapone and also raw eggs. But I made a promise to always make my favourite desserts the slimmed down version.
Lets begin shall we 🙂
INGREDIENTS :
Whip cream
Lightest cream cheese(lowest fat)
Bourbon fingers
Coffee
Sugar
Skimmed milk
Cocoa powder
UTENSILS :
2 Medium sized bowls
Hand mixer or table mixer
Rubber spatula
Prep time : 15 minutes
Method:
In a medium sized bowl, pour in the whip cream (its liquid at this stage) and whisk it for about 5 minutes or until it starts to take form (thick). Set it aside.
Next add the cream cheese and sugar into another bowl and cream until its smooth and well combined.
Once its combined, add the milk and if you like, vanilla extract. Mix for about a minute. Then set that aside. (No pictures for the above instructions)
Next fold in the whipped cream gently with the cream cheese mixture. Be very careful not to over mix. Easy does it.
In a small bowl, mix the coffee with hot water and sugar. Allow the sugar to devolve.
Then dip the fingers in one at a time and allow it absorb the coffee.
Next place it in baking tin, do that repeatedly until the bottom pan is filled. (See picture)
Next pour in the cream mixture over the fingers (see picture )
Repeat the first process again with the dipping of the fingers in the coffee. Arrange it over the cream mixture (see fixture)
Finally pour the remaining cream mixture over the fingers. Ensure it covers it completely.
Finally sieve cocoa over the cream mixture (see picture) cover the tin with a cling film and refrigerate overnight or for four hours to allow it set.
That’s it, you are done.
