Garden egg stew

Hi everyone, how are you all doing? Its getting colder here, si my spices level has increased. 🙂 anything that will make my mouth hot, I am down for in this chilly weather.

I have always heard about garden egg stew, tasted it once, but that was way back. My friend brought it for lunch one day and to me all I could see was green garden egg and loads of oil. Didnt take a fancy to it at all. 😩

Until recently I when I stumbled upon it again. But this time, it was just the garden egg, and I said to myself, I can definitely make this better and healthier. So I went to the market and got the garden egg and promised to make some. 👏👏

Lets begin shall we 🙂

INGREDIENTS :
Garden eggs
2 red habenero peppers
2 green habenero peppers
Beef
Cow hide ( pomo )
Tripe ( shaki )
1/8 of palm oil
1/3 of vegetable oil
1 large Onions
2 knorr cubes
Salt to taste

UTENSILS :
2 Medium sized pots
Wooden spoon
Baking tray

Prep time : 5 minutes
Cooking time : 2 hours : 20 minutes
Total time : 2 hours : 25 minutes

Method :

Wash all boil all the meat parts. Season with knorr cubes and salt and also add sliced onions to give it more flavour.
Cook until soft (1 hour: 40 minutes)

While beef is boiling, blend the garden eggs, onions and pepper. Blend roughly. *see picture below*

Next boil the blended garden egg until it well cooked and it changes colour *see picture below*

Next heat up the palm oil and vegetable oil. Add onions (do not slice, just place the whole onions in the oil) and heat up for 10 minutes (not more please)

Next add the cooked garden eggs and fry. *you will notice that there isnt any oil visible, don’t worry at all just keep cooking)

Fry for 10 minutes on a very low heat.

Check on the beef, once cooked, remove from the heat, add the beef to a baking tray and grill for 10 minutes.

After 10 minutes, add the beef to the stew, add the stock and cook for 15 minutes. By the time its done, a little oil may be visible, but thats mostly from the stock addition to the stew.

After 15 minutes, its cooked. Well done.

Serve with boiled rice *see picture below*
