Hi guys. I am back again with another edition of iBake. Baking has always been another hobby of mine. Been baking at an early age. Lol. I think I have mentioned this before 😉
Banana bread has its own health benefits and its recommended if you want to have low fat treats at home.👏
3 very ripe Banana
1 teaspoon of baking powder
1 teaspoon of baking soda
1/2 cup of butter
1/4 teaspoon of salt
1 teaspoon of Lemon (optional)
2 tablespoon of Vanilla extract
Half a cup of hazelnut
1/4 a cup of honey or demerara sugar or 1/2 if you want it really sweet
2 cups of plain flour
1 tablespoon of Cinnamon
1 cup of Buttermilk*

Preheat the oven to about 180 degree’s.
Butter the pan and set aside.
Peel and cut the banana. Add it into a bowl and mash. Next add the lemon juice.
In another bowl, mix the flour, baking powder, baking soda, salt and cinnamon. Mix until the mixture is al combined.
In another bowl, add the butter (room temperature) and sugar and mix until smooth and creamy.
Pour in the beaten eggs, vanilla extract and buttermilk. Mix until well combined.Then add the banana mixture. Combine until well incorporated.
Finally add the flour mixture. Add it gradually and mix slowly until all the flour has been used up. Mix a few times (3 to 5 times) to ensure its all combined and then stop!
If you continue to overmix it, you banana bread will come out dry! 😦
Pop it in the oven and bake for 1 hour 5 minutes. Please leave the bread to bake. Do not open the door until after the timer has gone off or else it will rise and collapse.
Let it cool off on a rack. Remove from the baking pan. Slice and enjoy with a nice cup of tea.

* if you don’t have buttermilk at home, not to worry. Simply measure 1 cup of milk and add either 1 tablespoon of Lemon or vinegar to the milk. Mix together and let it sit for about 15 minutes. There you have it. Homemade substitute buttermilk 🙂
