Steak with peppercorn sauce

Hi guys, how are you all doing today?

Today’s recipe is something I have been wanting to try for a long time. Especially the peppercorn sauce. This first time I had the sauce, it was at a restaurant and trust me it was amazing.

To get the perfect sauce, you need to make sure that it’s not over cooked or else, you will loose the taste completely (seriously)
The sauce also contains a bit of alcohol,  but I didn’t use it as I don’t do alcohol.

The steak, for me has to be well cooked,  if not I wont eat it. (I dont like raw meat or half done meat) thats why I never order steak tartar (raw blended meat with spices)

Lol, ok enough of my stories. Lets get started shall we. πŸ™‚

P.s for the steak I used the rib eye part. (For me its one of my favourite cuts of beef, so if you prefer Sirloin or any other part thats fine. It still works well with this recipe)

*remove your steak from the fridge. Leave it to sit at the room temperature.

INGREDIENTS:
2 rib eye steak
1 tablespoon of dry Barbeque seasoning
1 tablespoon of dry piri piri seasoning
1 tablespoon of cayene pepper
1 tablespoon of smoked paprika
1/2 a teaspoon of crushed chilli
A teaspoon of salt

For the Peppercorn sauce
1/2 a cup of peppercorn
1 small onions
1/2 a tablespoon of lowfat butter
1/2 a cup of double cream (use the one with less fat)
1/2 knorr cube

For the Sweet Potato wedges
2 large sweet potatoes
1 teaspoon of parika
A pinch of mixed herb spices
1 teaspoon of cayene pepper
1/2 a teaspoon of honey
1/8 of vegetable oil

UTENSILS:
Large grilling pan
Spatula
Foil paper
Medium sized saucepan
Baking pan

Prep time: 15 minutes
Cooking time: 1 hour: 30 minutes
Total time: 1 hour: 45 minutes

Method:
peel and cut the potatoes. Wash it to get rid of starch. Add it to a medium sized bowl.

Next in the bowl, add all in the ingredients including the oil. Rub it well with the potatoes and set it aside.

Next slightly crush the peppercorns in a bowl. Set aside.

Remove the steak from the package (if bought in a supermarket) place it on a wooden chopping board.

Mix all the ingredients for the steak, rub generously on both sides of the steak.

Heat up the vegetable oil in the grilling pan for about 1 minute and then seal the steak until the colour changes from redish pink to brown. (5 minutes on both sides)

Once sealed. Cover the pan with foil paper and place it in the oven to cook for 30 minutes on 200 degrees.

After 30 minutes remove it from the oven and (please keep warm)

Next reduce the oven to 180 degrees. Pop in the Sweet potatoes and bake for 30minutes (15 minutes on each side)

Whilst the potato is baking. In a small saucepan heat up the butter for 2 minutes or until melted.

Next add the chopped onions and cook for 2 minutes (keep stirring to stop the butter from burning)

Next add the stock, crushed peppercorns and cream. Cook on a low heat for 5 minutes.

Once baked. Turn of the oven and let the potatoes cool off for a few minutes. You can also put your steak back in the oven so that it will be a nice warm temperature as the potatoes.

Finally heat up the veggies of your choice. ( I used mixed peppers, peas, sweet corn and cauliflower)

Its ready to serve. πŸ™‚ very well done to you.
