Hi guys. How are you all doing? This recipe right here is everything. Lol. For real. I remember a long time ago, i would go to this small shop that sells this fried delicacy. Its always accompanied with fried dodo (plantain) and dun dun.(Fried yam)
Akara is so lovely and can be eaten with Ogi (cooked corn flour liquid) or with Agidi (solid corn flour) and the most exciting combo of all with Agege bread. (That’s my favourite 😉 )
Its easy to make. I promise to give you step by step guide that you can ease through.
Ok, lets get started shall we 🙂
- 2 cups of beans
- Vegetable oil
- 1 Habenero pepper
- 1 Tatashe (caspeium)
- 2 knorr cubes
- 1/2 a cup of Stock
- 1 medium sized Onions
- Wooden spoon
- Frying pan

Cooking time :tbc
Total time :
Pick the beans to remove the bad ones and the shaft.
Next rinse the beans until until the water is clear. ( 3 times)
Next peel the beans in the blender. Instructions here Blender peeled beans
HOW TO BLEND THE BEANS FOR AKARA
1: you will need half a bowl of water
2: Add two tablespoons of water to the beans and blend. At first the blender will not yield, which isn’t a surprise because it is doing a job without any form of lubricant (in this case water) but as you blend along it will become easier .
DuchessO Tip* Do not be tempted to add too much water or else it will be too watery and end up in a gooey mess
3: Add four tablespoons of water, but this time around in the middle. (The blending starts from the middle, so we need to start lubricating the blades to allow easy movement)
4: The beans will still look rough, that’s fine. It’s a gentle process to blend the beans. I want you to enjoy your akara as much as possible, because you have earned it. 👍.
Add another 5 tablespoons of water to the middle, scrape the sides and then shake the blender so that the beans will cover the water added and then blend
5: Add 10 tablespoons of water to the beans. This time it should be getting better when blending. Turn the beans in the blender with a wooden spoon (not whilst blending or else the blade will chop off the wood into the beans. Not a pretty sight)
6: the beans should be smooth now, if not add a tiny bit of water to smoother it out. But please not more than necessary.
Once the beans has been peeled and blended. Pour it into a wide bowl (preferably plastic)
Chop the peppers and onions. Set aside to fry later (I will tell you why later 😉 )
The next step is very important. Mix the beans thoroughly to incorporate air into it. Why? Because air allows it to rise and not turn out flat whilst frying.
Mix anti clockwise for 12-15 minutes. Lol. Serious work? Yep. Trust me you will thank yourself later. Well I did o. I was flexing my muscles so hard I decided to wear a tank top to show off my toned arms hehehe 😂😂😂
In a small sauce pan, heat up the oil and fry the chopped onions and peppers. Add half a cube of maggi or knorr. Fry until almost brown. (Trust me this will make your akara taste divine. By frying you release the flavour of the peppers and onions and it will help intensify the deliciousness of the akara) once fried, remove from the heat. Let it cool down a bit.
Once cooled add the beef stock and fried onions/pepper into the blender and blend into a smooth paste.
Add the blended paste to the beans and stir. Stir until both ingredients has been well incorporated. (Do not add salt or more cubes at this stage.)
Why? salt draws water out of the mixture, as you are not yet ready to fry. It will be added once the oil is very hot.
Heat up the remaining oil. Ensure it is well hot or else the akara will soak up oil and become soggy.
Once the oil is hot, (do a hot test)
scoop a little drop if beans into the oil. Once it fizzles fast, then the oil is hot enough. Add a little salt after tasting the mixture, just to ensure it’s well seasoned enough and mix.
Then Scoop the beans once scoop at a time into the hot oil. Do not scoop too many or else it will stick together. The akara needs room to form and expand.
Allow the akara cook through from the bottom and then to the sides.
Duchess O Tip* It is important to let the sides cook as well so that its easier to flip.
Once the bottom and sides is well fried, flip it over with a metal spatula. Do this with the others until its golden brown.
Scoop the remaining paste and fry until all has been fried.
Remove the oil from the heat and set aside.
Once cooled. Enjoy with Ogi
or with pepper sauce. Ata din din)
