Quinoa Moin moin

Hi guys. How are you all doing today?

Todays recipe is another one of my healthy meals. Quinoa is a healthy alternative to rice. Because of its low carbohydrate content. I heard about quinoa last year and to be honest I was like what’s that?

I had to google and see what the frenzibess was about. I was very impressed. Although I never anticipated making it like moin moin. I envisaged making jollof quinoa and fried rice quinoa. But I decided to do this first.

Although quinoa is healthy, but it should still be eaten in moderation as it still contains carbohydrate.

Ok lets get started shall we πŸ™‚

*Depending on the type of quinoa that you buy, some requires soaking overnight whilst others do not. So check the packaging. For mine I used “great scot” brand (UK) which did not require any prior soaking

INGREDIENTS :
2 cups of Quinoa
2 thin slices of Ginger (or more depending on your preference)
2 Habenero peppers
Mackerel fish
2 Eggs
1/2 a cup of water
Salt to taste

UTENSILS :
Blender
Mixing bowl
Wooden spoon

Prep time :15 minutes
Cooking time : 45 minutes
Total time :

Method : Boil the fillings
Rinse and gut the fish. Boil with onions and salt for 15 minutes.

Boil the eggs as well for 15 minutes

Rinse thoroughly for at least 5 times to remove the bitterness and foam.

Next pour the washed quinoa into the blender, add the pepper, garlic, ginger and 1 cup of water.

Blend until smooth.

Once blended pour into a bowl and mix gently. This is to incorporate air into the mixture, but not too much.

Next shred the fish to remove any bones.

Peel of the skin of the eggs and slice

Pour in the fish into the quinoa mixture and mix. Check for salt and add if necessary.

Divide the mixture into steaming containers. Then finally top it up with the eggs.

Seal the containes and then steam cook for 45 minutes.

After 45 minutes remove the containers and allow it to cool down before serving.

Your quinoa moin moin. It tastes absolutely amazing and also very light. So it also helps with digestion.
