Hello everyone. How are you all doing? This is another recipe based on healthy eating. Plantain has been part of my meals for eating less complex carbohydrates.
So I have learnt to incorporate it into many recipes. So watch out for them. They will all be featured under healthy eating and plantain.
Todays recipe was inspired by a friend of mine Adura. She loves plantain. Oh yes she does. I had to learn to love to eat it because of her. Oh don’t get me wrong. I love plantain (but in dodo form that’s fried plantain ) but now I am taking it a little further by expanding on the many ways of eating plantain. And most importantly still incorporating the right balance of low complex carbs and protein.
Ok lets get started shall we 🙂
- 2 large Plantain
- 5 Eggs
- Chicken breast
- Mixed Peppers
- 1 cup of Skimed Milk
- 1 tablespoon of Chicken seasoning or
Deep frying pan or casserole dish
Prep time : 5 minutes
Cooking time : 25 minutes
Total time : 30 minutes
Preheat the oven to 180 degrees.
Chop the chicken breast into bite size. boil the washed and cut chicken in a pot and until soft. Approximately 12 minutes.
Next cut the plantain into slices. Make sure its not too thick. Add it to a small pan and boil for 12 minutes.
Once both are cooked. Drain the water and turn off the heat.
Next break the eggs into a bowl.
Add the milk and whisk.
Next add the chicken.
Followed by the peppers and plantain. Mix well and then finally add your seasonings. I used paprika, cayenne, cumin and chicken seasoning.
Pour the mixture into the frying pan. Place it in the oven and then bake for 25 minutes.
Before removing it from the oven ensure the middle isn’t giggly. If it is, then place it back in the oven and bake for another 5 minutes.
That’s it you are all done.
Now enjoy your new found healthy way of eating healthy.
