Hi guys. How are you all doing today? Todays recipe combo is not common. I thought about making mash with yam, but I checked on google to see if someone has already. I did that because I wanted to be sure it was authentic, but alas someone had already. So I decided to make something else still using yam. Its amazing about the recipes that you can come up with. I have lots. Stay tuned.
Our food is very versatile, so we must find various ways in making it awesome. African food can be used lots of ways. It can even be fused with foods from other countries and still have a wow factor.
I have decided to broaden my up skills and oh yes more recipes awaits you my lovely followers. You guys keep me motivated (Thank you)
The Steak I wanted to keep it african. Yup. Most people make steaks using european spices, but I tell you we have loads of spices to make steak amazing and other countries jealous. No jokes. 🙂
The sauce, as far as steaks go, I have always had it with black peppercorn sauce. But I didn’t want that. I wanted something african yet with a european twist. I have two recipes for the sauce that is bound to blow you away, so let’s get started shall we 🙂
2 rib eye steak (I prefer this cut, but you can use any cut of steak)
Ground Uziza seeds. (If you don’t have that, use dried uziza leaves and crush it until it’s like powder)
Sweet Mixed peppers (red, green, orange, yellow)
2 medium sized saucepan
Medium sized pot
Prep time : 2 hours – (steak)
Cooking time : 40 minutes
Total time : 2 hours : 40 minutes
Rinse the steak. And pat dry with a kitchen towel (see picture)
Mix the spices together.
Brush the oil over the steak on each side. So that your steak wont be dry.
Next poke the steak in several places. This will allow easy cooking and fast penetration of the spice.
Next sprinkle the spices generously on each side of the steak. Cover the bowl with cling film and refrigerate for 2 hours. Ideally overnight would have been great, but 2 hours is great as well 🙂
50 minutes before 2 hours is up, peel, slice and wash the yam.
Cut into cubes and leave it in salted water to stop it from turning brown. (2 minutes )
Next wash the peppers and dice into medium sized cubes. Set aside. (1 minute)
Rinse the yam again and then boil it for 16 minutes. Once cooked, drain the water and set aside
Heat up 1 tablespoon of oil,add the chopped peppers and spices. Sautée until all the ingredients are combined 6 minutes.
Next pour the sautéed peppers into the pot containing the boiled yam and then mix. Gently mix and keep warm.
CREMÉ OF SUYA AU UZIZA SAUCE
This is one of my first sauce. Its very easy and less.of a hassle.
I used light soy cream. I dont like creams that have a high fat content. So I decided to use soy. If you don’t have that, use skimmed milk and evaporated milk.
Heat up the cream. Once heated but not boiling, add the same spice mixture that was used for the steak.
Let it simmer for 3 minutes. Make sure you keep stiring in order to avoid it burning.
Remove it from the heat, let it cool down for about 1 minute. Pour it into a gravy pot and cover with cling film.
After 2 hours, heat up the grilling pan, brush the remaining oil on the pan. Remove the steak from the bowl and place it on the grilling pan.
Seal it on each side. (Let it turn brown on heat contact) Let it sizzle before turning over. 3 minutes each. See picture below
Once done, reduce the heat and cover. Let it grill on the gas for 12 minutes. Please not more or else the steak will be dry. Turning over every other minute.
After 12 minutes, remove from the heat and get ready to serve.
Now its time to assemble your finest cuisine. 😉
