Hi guys. How are you all doing today? This recipe is another spin of, of the jollof rice family. Jollof can be made in various ways. Gas, oven. I have recipes for both on my blog.
I have made coconut rice before, but not like this. I was a little worried about the contrast in tatse that it may create, but I actually found out that it works. Its actually even more delicious than I expected.
The creaminess and flavour of the coconut brings out the goodness of the sauce made for the jollof rice and it isnt overpowering at all. Its balances it well.
Ok lets get started shall we 🙂
- 3 cups of rice
- 1 can of coconut milk
- 2 large Tatashe
- 3 atarodo
- 3 medium sized Tomatoes
- 1 large Onions
- Salt to tatste
- 1 tbs of Tomato purée (optional)
- 2 cups of Beef or chicken stock
- Lemon grass (optional )
- 2 medium sized pots
- Wooden spoon
- Foil paper
Prep time : 15 minutes
Cooking time : 1 hour : 30 minutes
Total time : 1 hour : 45 minutes
Blend the peppers, tomatoes and onions until smooth.
Pour the blended pepper into a pot, add the tomato purée and cook for 15 minutes.
Next heat up the oil, once hot, add the pepper and onions. I didn’t fry the onions as I did not want it to over power the sauce. Allow to fry for 2 minutes and then add the beef stock and spices. let it cook for 20 minutes on medium heat.
Meanwhile, Wash the rice thoroughly. Add the washed rice to the pot, add water to cover it and cook for 5 minutes (Remember in my palm oil stew post what I said about getting rid of starch)
Check on the rice. Drain off the excess starch and rinse until the water is clear.
This is what the lemon grass looks like. This is for those that would be using it. In the picture it shows how I removed the outer part of the stalk before using it in cooking.
Pour the rice back into the pot, add the coconut water and milk, I however sneakily added lemon grass. Lol. But dont worry if you don’t have that at home. Its totally optional. let it cook for 8 minutes.
Stir very well to allow the sauce mix well with the rice. Reduce the heat and let it steam cook for 20 minutes.
Check on the rice, by now it should have soaked up all the moisture. add the stock sparingly, and a little bit of coconut water. (About 4 tablespoons) just enough to allow it steam cook. Cook for another 15 minutes.
You are done. Now look at your handiwork. You should be proud of yourself at this stage. 👏👏👏
I served it with mixed dodo salsa and spiced chicken.
