Hi guys. How are you all doing? As promised I have another recipe for plantain. You all know that I love plantain right? Lol well if you don’t you are forgiven. 😉
I love plantain in all forms. Fried, baked, grilled boiled, stewed etc. So for today, I have a recipe for the stewed one. You will all love it. I have been wanting to make this for a while, but I has to make sure I had the process and sauce well balanced in my head before proceeding to cook it.
I have a balance. Hehehe. Ok so let’s get started shall we 🙂
3 semi green plantain
2 ripe plantain
Half a cup of Palm oil
Dry fish or shawa
1 very large Tatashe
4 Habenero peppers
5 medium sized tomatoes
Half a cup of Spinach or ugwu
2 medium sized pots
Prep time : 15 minutes
Cooking time : 55 minutes
Total time : 1 hour : 10 minutes
Wash the skin of the plantain very well. Cut and remove the skin of the plantain, cut it into medium sizes. Boil for 13 minutes.
Next blend the peppers and onions. Blend smooth. Pour it into a bowl.
After 13minutes, remove the plantain from the gas.. Remove one of the ripped ones, mash and set aside
Next heat the palm oil, once its hot,Then add the boiled pepper and fry.
Whilst frying keep stirring. Fry for 10 minutes. Next add the fish. Let it incorporate well into the stew. ( 5 minutes)
Next add the beef and it cook for 10 minutes. After 10 minutes, add the crayfish. This will change the flavour of the stew but not over power it.
After that divide the stew in half and remove the beef.
Next Add the mashed plantain, stir and let it incorporate for 2 minutes.
Next add the other cooked plantain. Add the remaining beef stock. Close the lid and simmer on medium heat for 15 minutes.
After 15 minutes, check on it. The plantain should have incorporated well with stew. Add the beef that was set aside. Turn gently.
Finally add the vegetables. Turn it around gently and let it cook for 2 minutes.
After 5 minutes, remove it from the heat.
It is ready to be served
