Hi everyone. Hope you are all doing great? Today’s recipe is based on healthy eating. I love fajitas, but the bread does not do good for my lifestyle. So I habe had to make changes.
But its amazing how these changes can be brought to life by being adventurous. I have always said healthy eating doesn’t have to be boring. Make it fun and colourful and thats what I intend to do today. So let’s get started shall we 🙂
Peppers (yellow, orange, green, and red)
Prep time : 20 minutes
Cooking time : 20 minutes
Total time : 45 minutes
Mix all the spices together.
Wash the lettuce and remove from tye stalk. Set aside
Next wash the chicken breast and slice thinly. Add it to the spices and let it marinade for 20minutes.
Wash the peppers and slice thinly. I love colours in my food 😍
Next add the oil to the pan, let it heat up and then add the chicken breast. Let it seal up nicely for the first 5 minutes. Make sure you are constantly stirring in order not to let it burn or stick to the pan.
After the first seal. Reduce the heat and cover. Allow to cook through for the next 10 minutes.
Finally add the peppers. Mix well and cook for the last minutes. Cover with foil paper so that it doesn’t dry out. Moisture is essential.
Now remove from the heat and set aside.
Assemble the lettuce and then spoon portions of the chicken into it.
Here it is non wrapped. You can either wrap it or leave it as it is. Either way its delicious and healthy. 👌
