Ofe Egusi

Hi guys. Happy new month. Been quiet for a while now. Just had so much to do that blogging had to be put aside for a while, but don’t worry, I am back 🙂

So I have blogged about Egusi before, and this may not seem new. However there is a different method to this kind of cooking. It requires, frying.

I have used this method in the past, but not entirely fried. As I just fried for a few minutes before Cooking, but however this one requires frying from the beginning in order to achieve its unique taste.

Ofe is igbo. So this Egusi will be fried. Hence Ofe Egusi. Don’t worry it won’t be such a tedious task. You will enjoy the process I promise.

Ok let’s get started shall we 🙂 

 INGREDIENTS 

  • Egusi (dry milled) 
  • Tatatshe
  •  Rodo 
  • Onions 
  • Palm oil 
  •  Assorted meat 
  • Smoked turkey (optional) 
  • Smoked fish
    Dry fish
    Crayfish 
  • Smoked crayfish 

 UTENSILS 

  •  Medium sized pot 
  • Wooden spoon 
  • Blender 

 Prep time: 10 minutes 

 Cooking time: tbc 

Method:
Boil the meat. Season only with salt and blended onions. (No curry and thyme)

Once it’s almost cooked, add the smoked turkey, dry fish and stock fish. Cook until soft.

Blend the peppers and onions together. Cook in a medium sized pot until the water dries up and it looks more like a paste.

Next Blend the Egusi, onions and half a cup of water. (Not too much water please)

Next heat up the palm oil,

once hot add the blended Egusi to the oil. Mix together and let it start frying.

At first it will look like this

But do not worry, keep stirring so that it doesn’t burn. Patience is much needed for this.

Keep stirring until the Egusi starts cooking and Looking more like this

Continue frying until the Egusi is cooked and fried.

Now add the cooked pepper and mix. Then Fry for just 10 minutes

Until it looks like this.

Next add the stock and water

Let it cook for 10 minutes on medium heat

Then add the assorted meat and fish

Let it cook and incorporate for 10 minutes.

Then add your washed kale. Steam for 4 minutes

Then finally add the ugwu. I like mine with a bit of crunch so I steamed cooked for 4 minutes as well.

That’s it you are all done.

Now it’s time to eat and enjoy. The aroma at the point was amazing
