Hawaian Teriyaki Chicken

This recipe is inspired by diners drive in and Dives. I am so addicted to that programme on food network. You get to save recipes and lots of ways of cooking that gets your mind working on tweaking recipes here and there. That programme is so informative i tell you. 

Anyways so one of the episodes that o watched was the Hawaian episode. Wow, talk about flavours and so many dishes. I was impressed so i decided to recreate one of their recipes and boy did i love it. It was so tasty! I guarantee you, that you will love it. And you will want to make it again and again. 

So lets get you started on that shall we 🙂

INGREDIENTS

  • Chicken thighs
  • Soy sauce
  • Rice wine vinegar (or use apple cider or malt vinegar)
  • Wochestershire sauce (you can skip it if you dont have it
  • Pineapple Juice 
  • Pineapple chunks
  • Mixed peppers (Any colours mixture of your choice) 
  • Ketchup
  • Hot pepper sauce
  • Fresh Garlic (grated)
  • Fresh ginger (grated)

UTENSILS

  • medium sized bowl
  • Wooden spoon
  • Grilling pan
  • Roasting pan
  • Plastic wrap (cling film)

Prep time: 5 minutes

Marinating time: 2 hours to overnight (by choice)

Cooking time: 1 hour : 30 minutes

Method: 

Mix all the wet and grated ingredients together. Place on the gas and let it heat up gradually. Allow 20 minutes on low heat

Next, Chop the peppers and set aside for use later.



Next Chop the pineapple.



Next Grate the garlic and ginger. Set aside.

Next, Mix all the ingredients together. Except the peppers. 

Add the chicken to the bowl. Cover with a cling film and marinade for 2 hours -overnight (your choice :)) but the more hours the better) 



AFTER MARINATING:

Pour all the contents of the bowl into a roasting pan.



Place it in the oven and bake for 1 hour.

   

 

After 1 hour, remove from the pan and then grill. For me I wanted the chicken to be coated well with the sauce and also infuse well. Doing both baking and grilling gives you that flavour you really need.

Once grilled, set aside and heat up the remaining ingredients for the sauce

 Then add the peppers   

Follower by the pineapple 

  

As I had already made the sauce earlier, it was easy to proceed. once the chicken was ready, I just placed it back on the gas and addee the above ingredients.

 

Finally add the grilled chicken.

  

Allow to simmer for 8 minutes and then remove from the heat. 

Its ready to be served 😀

Well done. 

I serve this amazing sauce with Fragrant Jasmine rice. The combo was amazing!
