Aubergine and Garden Egg Sauce

Hi guys, how are you all doing today? So today i decided to make use of two similar but different due to the country its grown vegetables to make an amazing sauce that can be eaten with almost anything. Yup. Thats true.

I have made a sauce with garden egg before, but I tool a different approach. So today i decided  to fuse two almost similar vegg and make an incredible sauce. 

Aubergines are like the affican gargen egg. Its very large compared to the garden egg and the colours are also different. 

Aubergine is Purple in colour, whilst garden egg is cream or green and small. (Cream mostly found in the UK and green found in Africa) 

So which ever of the garden egg you use, you will still get the same wow factor. 

Ok lets get started shall we 🙂

Remember pre cooking your beef before starting saves lots of time 

INGREDIENTS 

  • 3 large Aubergines 
  • 8 Garden eggs
  • 4 habenero Peppers (ata rodo)
  • 2large onions (one white and purple)
  • 1 cup of palm oil or less
  • Goat meat
  • Smoked turkey or chicken
  • Iru (locust beans)

UTENSILS

  • FooD processor or blender 
  • Medium sized pot
  • Baking tray 
  • Wooden spoon 

Prep time: 5 minutes 

Cooking time: tbc (if your meat is already  cooked as it saves time)

Method: 

Pre heat the oven to about 180 degrees.

Next, Wash the aubergines and garden eggs

Next slice all the vegetables except the aubergines



 Place it in the oven and cook/roast for 10 minutes.

After 10 minutes, remove the veggies from the oven and allow it to cool down.

 In the meantime, slice up the aubergines and cook in the oven for 10 minutes



Whilst that is in the oven, heat up the oil for 10 minutes (Working simultaneously saves loads of time:)

After 10 minutes, remove both items from the heat source and allow to cool down for 4 minutes. Please its vital as you dont want to damage your blender. 

Once that’s both cooled down done. Then roughly blend all the veggies





Place the oil back on the fire, add the locusts beans and allow it to bubble up about 30 seconds 



Then add the blended vegetables (aubergines, garden egg etc)





Allow all the ingredients to cook on a very low heat for 12 minutes 

Whist that is cooking, grill your beef for 7 minutes 



After 12 minutes Check on the sauce, then add the grilled beef and smoked turkey. 



Slow cook for another 10 minutes amd then it’s all done





You see why you dont need too much oil. 😊😊

Serve hot with rice. Now isnt that tasty.
