Nigerian Spiced Chicken Sauce served with Spaghetti 

Hi guys. Happy Easter! Hope you are all doing great? So today’s post wasn’t  planned. I was thinking of what to make for lunch, as I had already planed on making frejon for dinner. Then I remembered I had some fresh chicken at home and some cream. It didnt take me long to decide what to create out of both ingredients. 

Hehehe. Its simple to make and you dont need to spend ages in the kitchen. So if you are oressed for time, this is one of your best options 😃

Ok lets get started shall we 🙂 

Serves 3 People. 

INGREDIENTS

  • 1 pack of spaghetti
  • 6 pieces of chicken
  • White pepper
  • 1/2 a teaspoon of Dry red pepper
  • 1 1/2 tablespoon of Suya spice
  • 1/2 a teaspoon of Ground uziza spice or seeds (just mill it)
  • Mixed peppers ( red, green yellow. Your choice really) 
  • 1/2 Chickenknorrcube  
  • 1 1/2 cup of Double cream or (substitute with whole milk and add 1 tablespoon of flour or 2 tablespoon of corn flour. If using cornflour mix it with 1 tablespoon water first before adding to the milk.  
  • 1 medium sized onions
  • 1 clove of garlic

UTENSILS

2 medium sized pots

I small sauce pan

Prep time: 5 minutes ( rinse the chixken, remove hairs, chop or slice the peppers, chop the onions and mince the garlic) 

Cooking time: 25 minutes

Method: 

First of all, boil water in a kettle. You will need it soon. 

Next boil the chicken in a small pot with salt, some chopped onions and white pepper. Boil for 10 minutes

  

Next in another pot, pour in the boiled water, add the spaghetti and cook until soft and firm.   About 22 minutes. 

  

After 10 minutes heat up the fryting pan. Add 1 tablespoon of oil. 

Next add the chopped onions and minced garlic. Fry for 40 seconds.

   

 

Next add the cream. Cook on low heat for 2 minutes

 

Next add the chicken stock. Mix and allow to cook for another 2 minutes

 

Next add the spices and knorr cube

 

  

  

  

   

 

Simmer for 40 seconds. Then add the mixed peppers

  

Followed by the pre cooked chicken. Reduce the heat and slow cook for 15 minutes.   

After 15 minutes. Check on the sauce

   

 

Its done. And if you check your Pasta should be cooked as well. Drain and get ready to serve. 

All done. Less hassle and easy to assemble.
