Hi guys, how are you all doing. Its Easter! And that means for some of us who are strict observers of this festive period, only fish is allowed.
However, This recipe is for everyone except if you are vegetarian, which can be easily substituted with tofu. So feel free to make it any time. ☺️
I have made sweet and sour before, try and check that out on the blog. I will be frying the fish, but with very little oil instead. Healthier and tastier too. 😃
You can use any fish filet for this, but try and avoid oily fish. Instead opt for Hake, and other firm fish(es) it will make a lot of difference to the taste and texture.
Ok lets get started shall we 🙂
- 200g of Mixed fish fillets
- Mixed peppers (red, yellow, green)
- 3 tablespoons of Ketchup
- 2 tablespoons of Vinegar
- 3/4 cup of water
- Half a cup Cornflour + 2 tablespoon
- 1 tablespoon
- Pineapple chunks
- 1/2 a teaspoon of Black pepper
- 1/2 a teaspoon of White pepper
- 1/2 a teaspoon of Salt
- Rice wine (optional)
- 1 Egg
- 1 tablespoon of Soy sauce
- Half a cup of olive oil.
- Grilling pan
- Medium sized pot
- Wooden spoon
Prep time: 10 minutes
Cooking time: 30 minutes
Next, Cut the peppers and set aside.
Rinse the fillet fish and well and set aside
Next season the fish with salt, black pepper, white pepper and chinese five spice.
Next whisk the eggs and get it ready for the fish
Next pour the egg into the fish and mix
P.s: wash your hands and dry it before proceeding to the next stage.
Pour the conflour over the fish and then shake the bowl or mix the corn flour with your hands. Ensure its all coated (see pictures for illustration)
Once properly coated, heat up the oil.
Then Place the fish in the wok (a few at a time and fry until the batter is almost brown.
Once all has been fried, place on a kitchen towel to get rid of the oil. Even better 😃
Next heat up a sauce pan. Add the ketchup, vinegar and water. Mix well and simmer on low heat
Next add the corn flour mixed with water and then pour it into the sauce. It will thicken gradually.
Next add the chopped pineapple and the sauce, simmer for 2 minutes
Next Add the mixed peppers
Lower the heat and continue to simmer. The peppers does not have to be soft. The crunchy the better.
Finally add the fish. Becareful not to stir too much. As fish is delicate. Shake the pan instead to ensure the sauce has covered it well.
Simmer for 3 minutes.
Thats it all done.
Your sweet and sour fish is ready. Well done!
Now serve and enjoy
I served mine with Jasmine rice. Jasmine rice is so flavourful and aromatic. Perfect pairing.
P.s if you dont have jasmine rice, that’s perfectly ok, substitute with Basmati rice or even plain rice. Either way enjoy yourself 👍😊
