Basmati Coconut Rice

Hi guys! Hope you are all doing great today!

I have been waiting to make coconut basmati rice for a while, but something else came along, so I pushed it back abit. But I couldn’t resist it any longer, so I put the other recipes aside and decided to finally make this one.
I have already made coconut rice before, but not with Basmati and I must say, basmati wins hands down! Wow. The taste and the aroma is just amazing. I was literally inhaling it as I was Cooking it.Lol. 
The flavours from the lemon grass infused coconut oil to the smell of the basmati. Ohhhhh match made in foodie kitchen. I can guarantee you all that you would love it.

Ok let’s get started shall we. πŸ™‚
INGREDIENTS: 

  • 4 cups of basmati rice
  • 1 stalk of lemon grass
  • 1 can of coconut milk
  • Sweet corn
  • Carrots
  • Peas
  • Green beans
  • King prawns (cooked)
  • Chicken breast
  • Sweet red pepper
  • Yellow pepper
  • Green pepper
  • 2 knorr chicken cube
  • Half a teaspoon of salt
  • 1 large white onions
  • Vegetable oil

UTENSILS:

  • Wooden spoon
  • Frying pan
  • 2 Medium sized pots 

Prep time: 15 minutes

Cooking time: varies. Tbc

Method: 

Rinse the chicken breast, place in a small saucepan and season with sliced onions and salt. Cook for 15 minutes

Wash the basmati rice to get rid of the starch and set aside. 
Next open the can of coconut milk or if you have fresh coconut milk even better! 

Next pour it into the medium sized pot, add the lemon grass and allow it to boil for 5minutes. 

  
  Next add the first 1/4 cup of chicken stock

Next add the washed rice. Cover it with foil paper and then close it with the kid. Allow to cook on medium heat for 10 minutes. 

  
  

After 10 minutes, remove from the heat and set aside. 

  
  
The chicken should have been cooked now. Remove from the pot and then slice into medium sized cubes. 

Heat up the oil in the frying pan. Add the sliced onions and fry for 2 minutes. Make sure you use White onions as it’s much tastier😊
  

Next add the cooked chicken and stir. 
Allow to fry, but not too much, as all you need is just for it to flavour the oil. Fry for 5 minutes. Make sure you keep stiring.   

Next add the cooked king prawns. Fry for 1 minute
  
 

Now add the vegetables. Fry for 2 minutes 

 
Finally add the knor chicken cubes. Mix well and allow to incorporate for 3 minutes.

Now pour the mixture into the pre cooked rice.   

Add the sliced mixed peppers. Stir until all the veggies has been well incorporated into the rice, add the remaining chicken stock and cover with foil paper.

 
Allow to cook on the lowest heat until soft. Because I used the lowest heat as I wanted to get the most out of the flavours, it took at least 30 minutes. 
After its soft enough, remove from the heat. Ensure the heat is visible when you open the foil paper!

The Aroma at this stage was amazing. I couldn’t wait to dig in. 

As you can see I didn’t add curry, thyme etc. it just messes up the taste!
