Fried Fish Stew

Hi everyone, I hope you are all doing good? I was thinking of what to make for dinner, then I remembered I had fish in the freezer. I wanted to make fresh fish stew, but then I thought to myself, why not make something different.

I am not partial to fried foods, left to me I prefer to grill, as grilling still gives me the taste that I want to achieve. But then I decided to fry and give it a go. Once is ok, provided it’s not an everyday thing.
I remember watching the food channel about not seasoning fish with too much spice or herbs or you risk not tasting the fish at all. Over seasoning overpowers fish, so you have to be very liberal when It comes to seasoning. With that in mind I proceeded to make one of the tastiest fish stew. 

Besides Christmas is around the corner, what a better way to eat something different! 

Ok let’s begin shall we πŸ™‚

INGREDIENTS:

  • Fish (hake is better, it has more flesh to it)
  • 2 large tatashe 
  • 3 habanero pepper
  • 5 medium sized tomatoes
  • 1 large Onions
  • 1 cup of vegetable oil
  • 1/2 a teaspoon of Thyme 
  • 1 stalk of Basil (fresh) 
  • 1/4 a teaspoon of Rosemary 
  • 1/4 a teaspoon of Oregano (optional) 
  • Fish stock cube or salt 

UTENSILS

  • 1 small pot
  • 1 medium sized pot
  • Chopping board

Prep time: 12 minutes 

Cooking time: 1 hour

Method:

Clean and gut the fish

Then season with blended onions and salt. Allow to marinade for 10 minutes (If you don’t have time to blend the onions, use onion granules. You can get that in stores)

  
Next blend the peppers and onions. Once blended boil in a pot until the water dries up. (Around 25 minutes)

Next heat up the oil in the small pot and let it get oil( do a sizzle test, add a single slice of onion, if it sizzles straight away, then the oil is hot enough) 

Now add the fish.

  
Keep frying until it changes colour and the fish is thoroughly cooked 

   
Once you get this colour (picture below) it is cooked and fried enough (remember not to over fry or else you won’t enjoy it

 
Remove the fish from the oil and then set aside.

Next check on the pepper, once cooked remove from the heat.

  
Next pour the oil from the fish into a clean pot, add the sliced onion and fry for 3 minutes 

  
Now add the cooked pepper. Let it fry on medium heat for 12 minutes 
 

After 12 minutes, add the herbs.

 

Then add the fish stock cube. Continue to fry for 5 minutes 

 

By now the aroma will be very distinct due to the herbs added. Then add the fish. Shake the pot and allow the stew to be incorporated with the fish. Allow five minutes for this

   

Now finally add the chopped basil. You will need tonic redux the heat to the lowest for this. This is because the basil has to infuse the stew and fish. So please be patient. Allow 10 minutes for this to happen.
   
     
After 10 minutes here is what you will get 

   


That’s it, all done. The Basil just takes this stew to another level, trust me your taste buds will thank you for this.
