Spinach Yam Porrage 

Hi everyone, I hope you are all doing good? I have this great recipe to share with you all. I love yam Porrage, I really do and I am always looking for ways to improve on the taste anytime I prepare it. 

Adding spinach to yam Porrage isn’t new, however how I make mine is different, therefore it’s new 🙂

Spinach is a great source of vitamin K, vitamin A, manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, potassium, and vitamin C. It is a very good source of dietary fiber, phosphorus, vitamin B1, zinc, protein, and choline. (Source whfoods.com)

So since we are able to get all these from one vegetable, why not make it an addition to yam Porrage, it’s a win win situation here. Lol

Ok let’s get started shall we. 

INGREDIENTS

  • 1 medium size tubber of yam
  • 1 large tatashe 
  • 2 habanero pepper
  • 1 medium size tomatoes 
  • 1 large onions
  • 1 bunch of spinach
  • 1/4 cup of smoked crayfish
  • 1 tablespoon of ground crayfish
  • Grilled goat meat
  • Knorr cube
  • Palm oil

UTENSILS

  • 1 medium sized pot
  • Wooden spoon 
  • Grilling pan

Prep time: 10 minutes 

Cooking time: 1 hour

Method: 

Blend the peppers and boil until the water dries up. Preferably about 20 minutes

Next heat up the palm oil, add the onions and add the onions and fry until dark brown (see Picture below). Once browned remove. 

   
Next add the boiled pepper, stir and let it fry on low heat for 15 minutes 

 

After 15 minutes, add the smoked crayfish, ground crayfish and stock cube. Cook for 6 minutes

   
    
 
After 6 minutes, Now add the grilled goat meat and cook on low heat for 10 minutes 

   
 
Whilst the stew is frying , Peel the yam and cut it into small cube sizes

Rinse the yam,add enough water to cook it and add salt. Boil for 5 minutes 
 
After 5 minutes. Drain the water 

 
Now add the stock to the stock the yam and boil for 5 minutes. 

 

Both the yam and the stew has been cooked to a stage where both now need to be cooked together 

Add the yam with the stock to the stew  and mix together. (Mash some of the yam to form a paste) allow to simmer for 5 minutes 

  

Finally now add the spinach. (I blanched the spinach in hot water before adding. This will prevent water over leaching from the spinach) 

 Allow to incorporate for 2 minutes. And then it’s done. (Do not over cook the spinach or else it will loose it’s nutrients)    

 There you have it.
