Hi everyone, how are you all doing? It’s Valentine weekend and I am sure some of you are already gearing up for the day with your loved ones. (It’s not only for couples, spending it with family and friends also qualifies. The most important it share it with your close friends and family)
So whilst I didn’t plan on posting this season, I realised I had a planned meal that wasn’t going to take so much of time in terms of cooking, so I thought I’d create this post and let you all enjoy a hassle free dinner.
The last thing you want is to slave over a hot cooker and still not fisnish all the dishes you intend on serving. Key thing is work smarter not harder and you will still create an amazing dish!
Ok my lovely readers, lets get started shall we 🙂
- Diced chicken breast
- 1 can of chopped tomatoes
- I teaspoon of grated ginger
- 1 teaspoon of grated garlic
- 1 teaspoon of chilli flakes
- 2 tablespoons of Suya spice
- Sliced mixed peppers
- 1 small white onions
- Knorr cube
- 2 tablespoons of any oil of choice (olive oil, peanut oil, coconut oil etc)
- Rice (basmati, jasmine or just plain rice)
- Black pepper
- 1 large sauce pan
- Chopping board
- Wooden spoon
Prep time: 5 minutes
Cooking time: 30 minutes
Total time: 35 minutes
Dice the chicken and kidney. Rinse well until clean.
Now add the garlic and ginger. Let it fry for about 1 minute, not more or else it will burn.
Measure the rice and put it to to a pot. Add water and allow to cook for 15 minutes. (This is to help get rid of starch)
After 15 minutes, drain all the starch water and rinse using a sieve until the water is clean. Then place t back on the gas and simmer with very little water on low heat until it is cooked to perfection.
Back to the sauce
After 15 minutes, check for salt, you shouldn’t really need anymore.
Enjoy this heart warming dish with a nice cold glass of non alcohol bubbly. (This is my choice 🙂
