Pecastarian Potato Casserole (Tasty Fiesta 2)

Hello everyone. How are we you guys al doing today? It’s getting really cold where I am, so quick and filling meals are gonna be one of my new friends this season.

Tasty fiesta is one of Mr Biggs favourite Menus on offer. Apart from their meat pie, which I have a recipe for on the blog. I love their recipe. So I have decided to recreate it again, but this time add more ingredients to it, But still having that unique taste. 

Why pecastarian? And what is pecastarian? Why: I love seafood. One of the greatest thing about it is the versatility and the easiness in cooking. It has tons of flavour and is also good for your health, especially if you are trying to cut down on fatty meats and sorts. 

Pecastarian is basically seafood! All classifications of seafoods. 

Lets get started shall we 🙂

INGREDIENTS 

  • 6 very large eggs
  • 3 large potatoes
  • Smoked mackerel
  • 1 medium sized tomato
  • Mixed peppers (optional)
  • White pepper
  • Black pepper
  • Tuna
  • Shrimps
  • Prawns
  • 1 Small onions
  • Salt
  • Pinch of curry
  • Knorr cubes

Method:

Peel and rinse the potatoes.
Slice and chop into thin slices and boil for 13 minutes (first)

   
   
Flake the mackerel

    
Break the eggs into a bowl. Add the seasonings. whisk until combined.
Brush 1 teaspoon of oil on your baking tray
Next add the chopped cooked potatoes to the tray.

Followed by first layer of fishes

Next the shrimps and other seafoods of choice 
Next the peppers. 

Repeat all over, but make sure you end up with some potatoes at the top
Once done, add the eggs to the contents in the baking tray

  
Place it in the oven and bake for 25 minutes.

  
Once done, let it set before cutting into it
There you go! Pecastarian Tasty fiesta!
