Hello everyone, how are you all? It’s been a long time, I am so sorry. I had to take a much needed break. But I am back now and ready to keep you all updated with my posts.
One thing I love about recipes like this is the fact that it doesn’t always take loads of time, but yet it comes out tasting amazing and tongue busting with flavours. Really this recipe is amazing! I can guarantee you, you would love it.
When I first came across peanut chicken, I was intrigued about how savoury it with taste and I was also worried about it tasting too peanuty… But no, none of that all. Everything was just bursting with flavour. This recipe will be a hit with everyone. Although for those who have a peanut allergy, this wouldn’t be suitable for you :(. Don’t worry I will work on another alternative and post it.
Ok let’s get started shall we 🙂
- 1/4 cup Peanut butter
- 1 cup of Mixed peppers or you can just use green peppers
- Scallions (optional)
- Half a juice of Lime
- 1 cup of Chicken stock
- 2 tablespoon of Chilli flakes
- Thin sized Fresh ginger
- 2 tablespoon of Corn starch
- 2 tablespoon of Water
- 2 tablespoon of Olive oil
- 2 tablespoon of Sesame oil
Season the chicken with black pepper and tiny bit of salt.
Once mixed, pour the sauce into the pan and also add the stock. allow to boil. (It will be foamy at first, that’s the chicken stock effect. But then it will gradually decrease. See pictures below)
Check on the chicken. Once grilled, remove from the oven.
Finally add the mixed peppers. Let it simmer for 3 minutes (not more so that you don’t loose the vitamin nutrients from the peppers.
That’s it. All done.
Time to plate up.
