Kung Pao Chicken

Hi everyone! Happy New Year. Welcome to my very first post of the year. I am so excited to be here with you all. Thanks for all your support over the years. I am indeed grateful. Xx

So this first dish of the year couldn’t make it to last years post. I just didn’t get round to making it, but I promised myself that I must do it in New Year,by God’s Grace. So here it is. 

Let’s get started shall we

INGREDIENTS 

Marinade 

  • Chicken
  • 1 tablespoon of Soy sauce
  • 1 1/2 tablespoon of Shaoshing rice wine or substitute with rice vinegar 
  • 1 tablespoon of Cornflour 

For the Sauce 

  • 2 tablespoons of Vegetable oil
  • 4 tablespoons of Hoisin sauce 
  • 4 tablespoons of Balsamic vinegar
  • 3 tablespoons of Sesame oil
  • 3 tablespoons of Soy sauce 
  • 1 tablespoon of light soy sauce 
  • 2 tablespoons Corn flour 
  • 2 tablespoons of honey (you can add more if you wish…) bit remember it’s meant to be savoury not too sweet πŸ™‚

To finish off

  • 12 dried Dried Chilli
  • 1/2 a cup of Cashew nuts 
  • 1/2 a sliced Onions (white)
  • 2 cloves of Garlic
  • Half a thumb size of Ginger

UTENSILS

  • Chopping board 
  • Knife 
  • Wok or large frying pan 
  • Wooden spoon 

Prep time: 15 mins- 1hour 

Cooking time: 30 minutes

Total time: 45minutes- 1 hour 

METHOD:

clean the chicken

Next dice it into medium cube size pieces 

Marinade it with 

  • 1 tbs of soy sauce, 
  • 1 tbs of rice wine and 
  • 1 tbs of cornstarch 

Let it marinate for 30 minutes

After Marinating. Heat up the wok/frying pan. Ensure that it is hot. (Very vital in cooking this dish)

Once hot, add the oil and let it heat up

Add the chicken


Keep stiring. Make sure it cooks well. (Please do not be in a hurry, undercooking chicken is harmful and it may cause salmonella) give it at least 20 minutes of cooking time 


Once cooked, remove from the wok and set aside. 

Next wipe the wok clean. Add the second oil and let it heat up

Next add the onions 



Let it sautΓ©e for 4 minutes on low heat

Next add the grated garlic and ginger 


Next add the Chilli. Allow it to be fragrant for 30 seconds

Next add the chicken


In the meantime mix all the remaining ingredients together. Add it to the chicken 


Finally add the cashew nuts


This stage is optional. Add mixed peppers. I like colourful food


Remove from the heat. Let it rest for a few minutes before serving. 

I served mine with rice
