Hello everyone, how are you all doing? Christmas is just round the corner and I have been creating lots of dishes and developing recipes just for you all to enjoy.
This recipe is one I should have blogged about last year. Yep you read right last year, but other recipes kept blocking it and I had so many recipes that I have imagined, that this kept on being pushed further back and back.
So recently while I was planning the meal for the weekend, I stumbled upon this dish again and I was like no, this has to be done and dusted, no more beating about the bush. Lol, I felt so relieved that I had done this, it was like a weight had been lifted up my shoulders. I had planned on making another savoury chicken dish, but this one wasn’t having it, so I gave in.
This chicken recipe is one not to be missed, it’s so delicious and easy to prepare and I guarantee you, you will want to make this over and over again.
Oh by the way, that other chicken recipe… I will still be making it and adding a twist to it, watch out for it.
Ok let’s get started shall we
INGREDIENTS
- Chicken breast
- 1 teaspoon of White pepper
- 1/2 a teaspoon of Black pepper
- 6 tablespoons of Flour
- 1 Egg
- 1 tablespoon of fresh grated Ginger
- 2 cloves of Garlic (grated)
- 6 tablespoons of Corn starch (half for the batter, the other half for the sauce)
INGREDIENTS FOR THE SAUCE
- 1 cup of Orange juice
- Soy sauce
- 1 tablespoon of Chilli flakes
- Mixed peppers
- Vinegar
- 4 tablespoons of Honey (adjust to your preference)
UTENSILS:
- Frying pan
- Medium sized pot
- Bowl
- Kitchen tongs
Prep time: 15 minutes
Cooking time:
Method: The Batter Prep
Cut the chicken breast into medium size cuts.
Season with salt, black pepper, white pepper
Then add half of the corn starch (3 tablespoons) and flour.
Add the whisked eggs. Mixed together and let it sit for a 5 minutes
Next heat up the oil.
Once hot do a sizzle test.
Then add the chicken in piece by piece. Make sure it’s not too overcrowded in the oil.
Fry until golden brown. Please give it at least 8 minutes to cook/fry
The Sauce Preparation :
Mix all the ingredients for the sauce (orange juice, soy sauce, vinegar, honey and add the chilli flakes as well)
Grate the ginger and garlic
Next heat up 2 tablespoons of sesame oil and then add the garlic and ginger. Fry for 1 minute on low heat
Next add the sauce. Allow to simmer on low heat for 12 minutes
After 12 minutes, add the corn starch mixture ( 3 tablespoons of corn starch with 2 tablespoon of water)
Make sure you are stirring continuously as you add the corn starch or else it will congeal in one spot
Allow to cook for 2 minutes, whilst stirring occasionally
Now add the chicken and chopped peppers. Let it cool for 5 minutes
This is what you get after 5 minutes of cooking. The sauce would have thickened
Remove form the heat and let it rest.
It’s ready to bet served. Now wasn’t that amazing!
Serve with Jasmine or Basmati rice. It takes the meal to another level.
